I would vote for Wurlitzer PIANO. But I didnt see it. The Wurlitzer organ would be rather awkward in a surf recording.
Also Melodica has a beautiful sound.

I voted Hammond, but only 'cause I'm slightly biased. I own a Hammond M2 spinet. Otherwise, I'll likely have to settle for emulations using Native Instruments' B4II (for Hammond, Farfisa and Vox stuff), and Elektrik Piano (for Fender, Gibson and Wurlitzer stuff). Maybe even Pro53, for emulations such as Minimoog, Prophet 5 or Juno. Depending what I intend to create, I might just mic. the M2 (once I get it working).

Farfisa Compact. I love the Vox organs too, but they seem to be really hard to come by around Sacramento...

No, like Ted (spskins) said above, that's a Wurlitzer electric piano on Pipeline. My choice as well for surf.
The Surfites get a similar sound on their Big Pounder album, but I think Klas wrote somewhere that it's not a Wurlitzer.

In the Nelsonics we used a couple of different Farfisas with a rotary speaker. They broke down fairly frequently. In Transistor Royale our keyboard guy uses a new Nord keyboard. It's got some great Hammond sounds, decent wurlitzer type sounds and electronic organ sounds as well. Of course we'd prefer vintage gear, but with the Nord there is no worrying if the organ will work or break down mid-set.

Our band just bought another Farfisa as a back-up....great sound but soooooo many things inside there that could fail at any time. Of course there's the joke I've heard often (possibly here) that Farfisa is Italian for broken.
Althought mine is currently 100% working, the B flats often make a crazy tone when I turn the organ on. I've got to turn it on and off a couple times to get it working right. Last time I had it down in the Bay Area to get serviced it wouldn't repeat the problem so we couldn't troubleshoot it.
In addition to being an important part of our sound, the Farfisa is also a stage prop for us....just like I wouldn't want to see a surf or garage band playing out of Crate or Mesa amps, it doesn't look right to me to see a huge shiny Casio keyboard covered with LED's on the stage while a band is playing surf or garage.

Granted the band could have crappy gear and be amazing but the level of musicianship would have to be amazing. The songs they wrote would have to be amongst the best ever created.

Although I voted for the Hammond in the poll, I DID notice I liked the Farfisa sound that the Ventures used in their WALK DON'T RUN '64 VOL II. I think Don Wilson did some of those tracks as well as Leon Russell.
However, not exactly a Surf Band although they were Instrumental, I still give credit to BOOKER T and the MGs for introducing the Hammond in an early
Combo set up. I know there were other combos as well using the Hammond, but I think B.T.& the MGs were one of the most recognizable groups.

Man, I've been totally eyeballin' those Nords on the Ebay...they seem to be getting excellent reviews, and the sound samples on the youtube sound pretty decent...but, man...they do seem a bit pricey $$$!!! I better get a second job pretty soon...

Yes, I tend to not take bands seriously whose gear is not looking right. Its my fault.

the Nord C1 combo organ (two keyboards) looks super rad, but is very expensive. Jack, our organist, has the Nord Electro and he retrofitted what I believe is the stand for a vox continental for more of a vintage look.

I remember for Hot Rod Hula Hop II (2006), Knuckle Dragger has a Farfisa in their lineup. At this years Hot Rod Hula Hop IV, the first band, Go! Tsunami is a 4-piece band consisting of guitar, organ, bass and drums. I forget in which thread it was mentioned, but I remember something about organ being used, with such a lineup, in such a way that the guitar player don't end up always playing lead/rhythm for the whole set/night.

Man I love those Nords, but man What the Hell? Too expensive. But I do like them. The one I tested out sounded a lot like a Hammond, I guess someone must have left those settings on it

IMHO keyboards make surf music cheesy.
Keyboards have a place in many forms of music but not surf.
Worst example is The Ventures telstar.
Go ahead and hit me with your best shot.
But you ARE entitled to MHO.
