are there many bands that play surf music, but really muck with time signatures and progressive song structures?
I love a fender into a reverb unit and those lovely surf drum beats and fills, but my attention span is horrendous these days. I realize the driving danceable rhythms are a huge part of the surf music equation, but I would love something a little different.

Not totally surf, and not super "mathy", but definitely progressive.
Maybe you know about these guys, they are one of my favorite bands.

First thing that springs to mind when I hear “different” is the Mermen. Not sure if that fits your needs, though.

i do love the mermen for sure.
when I played instrumental music I tried hard to write in 3/4, 7/8, other shifting time signatures with weird subdivisions. kept my brain focused. would love to find more. or, y'know, try to make some myself. i miss living near my old drummer.

Checkout the band "Threesome" from Serbia. They played here at the convention back in 2014 and for a band with math like tendencies, the crowd really loved them.

Same here! A gem I have found is band Dalindeo from Finnland. A realy enjoyable blend of Jazz, Rautalanka, Finish roots music from 50-60s, and Surf. Can't recommend them enough.

Daikaiju is pretty progressive but you can still hear the surf influences (the occasional use of the surf-beat and tremolo picking for example). I'd start with their Phase 2 album.

There's a German band called Expressway Sketches. I would call it "Surf-Jazz".

And here is one more for you. The Break, a band consisting of members of Midnight Oil and Violent Femmes. Not exactly Prog, not really Jazz, no Math-Surf, but a very fresh take on Surf Music. I like it a lot:

@cosmonaut, we may not be quite as experimental as you're hoping for, but my surf band really pushes the genre in the direction of punk and even has some metal influence, all while using super clean guitars. You might dig it!

Hi there! Check out my band, 'Volny Sovetov'. This track is kinda psychedelic/proggy/sci-fi surf https://www.youtube.com/watch?v=wj9_2LEhHJE. Actually we're a soviet-esque band.

We use mixed time signatures. If you're looking for something that's not 12 bar blues and blurry reverb, you may dig this:
