Monin makes some good orgeat, and it's pretty easy to find online.
Simple syrup is incredibly easy to make, easy as boiling water (literally).

Check this Mai Tai recipe:the Don the Beachcomber 1933 version with eight ingredients including a few drops of Pernod, and a dash of falernum syrup. I found a recipe for Falernum quickly and made some out of leftover homemade orgeat – the hardest part of making Falernum. I'll report bck on my results tonight. — |

Interesting to see this thread pop back up. I just got four (count 'em, FOUR) bottles of rum to stock my bar from Total Wine in Jax, FL. Since I first posted this I've acquired a lot of rum, Beachbum Berry's REMIXED, and been through a lot of drinks. Most of them are not all that good to me as published. Everything tends to be either too sour or too sweet, but part of the fun is modifying the recipes to suit. You can spend a week acquiring new ingredients and still not have all the ingredients for any of the drinks on a given page in that book... Since this thread I have been sticking totally to the Trader Vic's Mai Tai recipe and it has been serving me very well. It is still my favorite drink to make at home and my favorite drink at Trader Vic's (their's is much better). The Bum opened his own joint up in New Orleans. Latitude 29. They're sellig his orgeat on Amazon. Expensive, but I figure if he's putting his name on it it's probably pretty good. It's summertime, and while a Mai Tai can be enjoyed all year, this is the high season. This thread taught me how to make one, so I thought I would give it a bump. Here's my recipe. This is basically Trader Vic's recipe, but with rock candy syrup and specific rums. It is good to experiment with the rums, but I like these. This recipe serves two, but it is a liberating experience if used to serve one. 2 oz Appleton Estate 12 year old Rare Blend Mix all ingredients and shake with ice. Strain into a short glass over crushed ice. Garnish with a sprig of mint and use a short straw to get your nose close to the mint when you sip. Don't skip this important step. -Tim —-Tim |

Caipirinihas? I'm not familiar with them, but I am intrigued. Off to Wiki, I'll be right back... Wiki says it's the national cocktail of Brazil, made with cachaça, sugar, and lime. In cachaça the alcohol results from the fermentation of fresh sugarcane juice that is then distilled, while rum is usually made from refinery by-products such as molasses. Sounds delicious.
