Back when I was doing that sort of thing, another reason that a band might throw in any sort of instrumental tune was to give the singer a break, especially if he had a weak voice. The band I worked for broke down to about 50% of the songs sung by the lead singer, maybe 20% each by the drummer and rhythm guitarist, and the bass player and lead guitarist had about a song each for the night. That meant that they played nothing instrumental, but that was OK.
Back then, bands playing their own music had a limited number of venues to play at locally, and got $250 a night tops (most paid a LOT less). Play the top 40 and you were playing bowling alleys, but for $600 a night.

Not much has changed for band playing original music. From my touring experience over the past year and from speaking to other touring bands that we have shared bills with, 250 a night is actually above average these days. It is a sad, sad state of affairs...

I don't play out these days, but so much of it depends on the venue. Most of the working bands I know have carved out a niche. That usually requires maintaining a somewhat steady repertoire. For example the blues bands get bookings, decent contracts and steady work because the are working the same venues and the expectation is they draw a crowd based on what they are known for. The weekend hobbyist guys I know, the Sun. afternoon on a patio, no contract, no following etc. can get away with genre bending because the are background music at best.

We mix surf with a bit of garage, add some progressiveness and occasionally perform in a punkish way. The resulting songs are hard to categorize. Our originals are not the standard 12-bar w/turnaround surf, there are lots of changes in the melodic lines and in drumming so we try to keep our set under 1 hour, 1:15 max.
I've found that you can hold the attention of the crowd with your overall presence including your enthusiasm, expression, motion, talking between the songs, shouts during the songs etc. Add 2-3 familiar tunes somewhere in between your originals and you're fine.
We also share the nights with similar-sounding bands with vocals (there are no other surf bands here, anyway)

Athens, GA? While there aren't any surf bands in that town, there is a decent size surf movement happening in your region.

Wow, there are places where the owner cares what you play? Most places I've been to don't even have the owner present, and some of the owners I have seen don't even notice if the band is playing.
Back in 1992, there was a "Battle of the Surf Bands" in Huntington Beach:

There were some first-wave surf bands there but they played mostly oldies with a few of their original surf classics. To me, it was quite disappointing since it was a "Battle of the Surf Bands"! However, this is how these bands survived the 60's in the first place. Fortunately, there are plenty of opportunity around here to see and play all-instrumental gigs.
I don't know if it counts, but there are several types of instrumental genres around. Lots of good blues instrumentals from Freddie King and others, country instrumentals, plus the Shadows instrumentals aren't exactly surf, are they?

Exactly, I've never encountered this. You can't even call yourself a band if you play what the owner of a bar wants you to play. There is no artistic integrity to that.

Surf 'n Steel....
I play lap steel guitar and I love the music of The Shadows. I have recorded many Shadows tunes such as "Atlantis", " Peacepipe", "Cosy" etc. etc. I have recorded two CDs, the first of which is called....predictably... "Shadows on Steel". I am new to this forum and have just posted my latest recording, in The Shallow End of this forum.
