I'm sure at least Jeff has one.

I just made my first Mai Tai. After Don The Beachcomber's a couple of weeks ago I figured I had to take a shot at making my own. The recipe I got from a book I have is

1 measure light rum
1 measure dark rum
1 measure apricot brandy
3 measures orange juice
3 measures pineapple juice
1 measure grenadine as a topper

It's dang good and seems "authentic" enough to me.

From Beachbum Berry, the prophet of tiki drinks:

1 1/2 oz FRESH lime juice (key limes, if you can get them)
1/2 oz orange curacao
1/4 oz orgeat syrup (almond flavored. I get Monin brand at a coffee shop nearby)
1/4 oz simple syrup

Now, the rum. The Bum says 1 oz Jamaican, and 1 oz Martinique. I use 2 oz Appleton Estates Extra. Fairly easy to find. The Reserve will work in a pinch, but don't use the V/X unless it's all you can find.

Add ingredients to shaker with crushed ice and shake for 30 secs. Strain into glass with crushed ice, garnish with a sprig of fresh mint. Cut the straw down so your nose is in the mint while you drink it.

A lovely drink, but maybe not what you expect. I use 1/2 oz orgeat, as I like it a little sweeter. If you can't find all of that, I'll bring the fixins down to Surffest next year.

Staredge is right, that's a Mai Tai.
Notice it doesn't have any fruit juices, just some lime juice. This drinks is meant to feature good aged rum in it, so you have to let it shine through. The problem is that with crappy harsh rum, it just doesn't taste very good. Good tip about Appleton Estate Extra, that's a good rum to use. St James Martinique Hors D'Age is the Martinique rum to mix with that.

I've never maid a Mai Tai myself,

though I did come up with something kinda close 1 time.
its basically a GROG.

but I had 3 ounces of 3 different dark rums.
one was Macombo from mexico,
the other 2 I am drawing a blank,
but dark rums, good ones, like 40 bucks a bottle or more.
not myers.

then
1/2 oz. Lemon Juice
1/2 oz. Lime juice
2 table spoons of dark Brown sugar,
and a few sprigs of mint,

so its a fancy Grog,
but it had hints of Mai Tai in there.

try it, let me know what you think.

You can't really go wrong with the Trader Vic's recipe.

However, if you have falernum, you could try my recipe:

Mix in iced shaker:
1-1/2 ounces light rum
Splash falernum
1/2 ounce orgeat
1/2 ounce orange curacao
Juice of one fresh lime
1/4 ounce simple syrup

Pour into collins or chimney glass filled with crushed ice

Float 1/2 ounce of the darkest rum you can find

Add lime slice for garnish

Add sprig of mint for garnish

I've made quite a few Trader Vic's Mai Tai over the years and although I really like the drink, it probably wouldn't rank in my top ten.

An interesting and tasty alternative to the classic TV concoction is the Surf Room Mai Tai which actually contains additional fruit juices as well as 3 different rums but also have the lime, orgeat, sugar syrup and Curacao found in the Trader's recipe.

<u>Surf Room Mai Tai</u>

1 ounce orange juice
1 ounce unsweetened pineapple juice
1/2 ounce fresh lime juice
1/4 ounce fresh lemon juice
1/4 ounce orgeat syrup
1/4 ounce sugar syrup
1/4 ounce orange Orange Curacao
1 ounce Demerara rum
1 ounce dark Jamaican rum
1 ounce light Puerto Rican rum

Shake with plenty of crushed ice and pour into double old-fashioned glass. Garnish with pineapple finger, sugar cane stick, orchid and mint sprig.

Beachbum Berry's Intoxica comment on it:

"From the Surf Room of the Royal Hawaiian Hotel, Waikiki, Hawaii, circa 1940s. The old Kamaainas of Waikiki still insist that the Mai Tai originated at the Royal Hawaiian, and that this is the authentic recipe - even though Trader Vic is universally acknowledged as the inventor of the drink".

I'm really looking forward to Berry's upcoming book Beachbum Berry Remixed which updates his previous Grog Log and Intoxica but also adds lots of newly discovered, previously unpublished vintage tiki drink recipes as well as new ones from today's tiki revival.

I love the idea of exotic drinks.. but there is one problem.. I don't drink alcohol. Any one have any nice exotic virgin drink recipes?

I've become really interested in doing the $100 mai tai; my only problem is food allergies. Does anyone know if Vic's syrups are corn-based? (Or even better, if you have an ingredient list.)

HFCS, almost certainly. Finding anything that isn't is going to take some work. Homemade orgeat will probably be your best bet. Ran may have a recipe...if not, you can find one on Tiki Central. Stirrings has a simple syrup made out of cane sugar. That might work for you. Homemade is also an option....it's disgustingly easy.

Ok guys, back up for me: rum recommendations.

We have Myers. It's all we've ever had and all my wife has ever used to make her holiday rum cakes, so that's what I used. For light I've got Bacardi and when I'm through with that I've got a bottle of Mount Gay. I've always been a bourbon, scotch, and to a lesser extent, vodka guy. This is my first foray into rum.

Interesting how this recipe (taken from "The Ultimate Book of Cocktails" by Stuart Walton) is nothing like the other recipes you guys mentioned.

Will, I think we should set up a Mai Tai bar at Surf Fest.

Not a surprise, really. Especially with tiki drinks, there were a lot of secret ingredients and mixes used to keep other bars from stealing signature drinks. Beachbum Berry is the go-to guy for tiki drinks. His books are being reissued here soon.

Nothing wrong with that... I've always hung out with older people who could buy beer for me, so the temptation was too great. (I think I started my recreational activities at 12... plus I'm Irish... hahah.) Anyway, I looked into other virgin drink recipes for my nephew, and it seems club soda and juices are the way to go.

My thing is.. I grew up in to the punk / hardcore scene.. and I was Straight Edge (No drugs, alcohol, etc.) and that has stuck with me. I am 26 now and have not touched anything like that since I was really young and being a goof. My wife does not drink as well, so it is easy to stick to it when we are both living the same clean and healthy life style.

Thanks Will, I figured it might take some extra work. At least I know I'll be okay with both rums mentioned, both sugarcane based.

morphball: Yes, actually I have one on the back of my left arm.. it is a skull and crossbones with an "S" and an "E" on opposing sides of the crossbones. Got that when I was 18, haha.

Alright, found out Vic's orgeat is a no-go... corn-city and lots of artificial ingredients in there. (That goes for Fee Bros too.) Looks like the best alternative other than making it from scratch is either Monin or 1883. I think I'm okay with Marie's Curacao, since theoretically it should not need to contain any corn syrup. I don't trust the Vic's rock candy either, I'm thinking that since I have an aversion to cooking, I may have to look into a cane syrup instead. (Monin makes one, hopefully that wouldn't stray from the recipe too much.)
