If you can, stay till monday afternoon.
We do a surf history tour, and go to the Wedge, and Where the Rendevous Ballroom used to be, and on the way to the Surfing Museum, we stop at TK burger, to eat, and look at the stuff on the walls, and ceiling.
a fun way to wrap up the weekend.

Noticed something weird on Mom's menu... of all the very famous and noteable people they name their burgers after, I saw they had one named after the bass player of The Deftones... Chi Cheng. Isn't that bizarre? Not that I am Deftones fan, just found it odd.

Any Austin locals up for burgers at Dan's on North Lamar today at noon? Dan's is like the Telecaster of burgers. Always great, not flashy, not bloated, great for getting the job done. I guess it's kind of a utilitarian burger. Dan's is known for being incredibly consistent and the best local burger for the price (burger and fries for about $5).

The best burger I enjoy is one I make. Stuff the ground beef with chopped cheddar cheese, pepper and onion. Make it big, around a half-pound before grilling. Grill it real hot so it flames around the burger, searing it closed and sealing in all the juices, even cooked medium-rare. Make sure there's lots of carmelization for added flavor. I put two slices of American cheese on it for the last 30 seconds or so. Top it with a grilled portobello mushroom, crisp bacon and a slice of freshly cut cold tomato and serve on a bun that can hold it all together. Now, that's a burger. It needs no condiments at all.

What he said! I've found that when making stuffed burgers, it's best to make a cup out of the ground meat (But jumping queues and making haste just ain't my cup of meat...) and filling the hole with cheese. Then I close the hole and carefully smooth it out, rolling the burger ball around in my hands until there are no seams. Then I very carefully flatten the burger ball to just the right width and then place it on the grill (or the skillet when I can't grill). When I do cook burgers on the stove, I use a covered skillet and cook on low heat to keep the burger from drying out and overcooking. Essentially, it's like cooking with steam. Works perfectly every time.
I cook bacon with the covered skillet as well. I cook it on low heat. Takes longer, but the bacon stays flat and cooks nice and crisp all the way through.
